Las Botijas is a group of 33 small farmers in the central Honduran municipality Villa San Antonio, Comayagua. It's a relatively new group, most of the coffee in the area planted in the last couple of years. The majority of the coffee in the region are Catimor types, with Typicas and Lempira mixed in. This group has had the support of an NGO, helping to build out their wet mill, raised drying beds, and more. We tasted this particular lot on a trip to Honduras last January, and happened to be in Las Botijas town during a local "feria" (festival), which that first photo is from. It's worth noting that a Pacamara separation from Las Botijas group won Honduras Taste of Harvest competition this past July.
The dry fragrance reminds me of holiday spice bread, a base sweetness that's like honey-wheat, with subtle hints of cinnamon and dried golden raisin. Adding hot water to the mix continues the "baked goods" theme, banana bread smells coming up in the steam, 5-spice and dark rye bread. City+ and Full City roasts promise compact bittersweetness, finding balance between notes of roasted cacao nibs and minimally processed sugars. As you move through the cup, flavors of caramel, almond and dark cocoa come to fore and remind me of a Mars candy bar. Las Botijas is a great candidate for darker roasting, with sweetness that will stand up to complex roast tones brought on with 2nd snaps of Full City+.
